Ingredients
- 1 lb ground beef
- 3-6 bell peppers (any colour you prefer)
- 3 cloves garlic, minced
- 1 onion, thinly diced
- Half a can of diced tomatoes
- 1 tablespoon garlic powder
- 1 tablespoon italian seasoning
- 2-3 tablespoon taco seasoning
- 2-3 cups of mozzarella cheese
- Cooked basmati rice(for serving)
Recipe & Preparation
- Prep: Preheat your oven to 375°F. Wash the bell peppers thoroughly, then cut off the tops and remove the seeds and membranes.
- Cook the Filling: Heat olive oil in a large skillet over medium heat. Add diced onions and minced garlic, sautéing until softened and aromatic. Add the ground beef to the skillet, breaking it apart with a spatula, and cook until browned and cooked through. Stir in the diced tomatoes, garlic powder, italian seasoning, taco seasoning, cooked rice, and season with salt and pepper. Cook for an additional 5 minutes to meld the flavours. Remove from heat.
- Stuff the Peppers: Place the prepared bell peppers upright in a baking dish. Spoon the filling mixture into each pepper until they are generously filled. Sprinkle shredded cheese over the top of each stuffed pepper, covering the filling.
- Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and golden.
- Serve and Enjoy: Carefully remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with chopped fresh herbs, if desired, and serve hot.
